Last night was a potato-fest. First, I made a baked potato a la Fergus Henderson, that is, with duck fat and roasted garlic. Then, Suvir Saran's recipe for aloo bonda (little nuggets of spiced mashed potato, coated in chickpea batter and deep-fried until golden) and tomato chutney.
I am getting huge.
