Som Tum Salad
But not really. I had no green papaya so I used Granny Smith apples. And rather than pound everything together, I simply tossed the ingredients.
Simple: take two apples, cut into matchstick shapes, and add to a bowl with two or three Thai chiles (or do what I did and use one Thai bird chile and one red Fresno chile), a couple of finely sliced shallots, the juice of one or two limes, a tablespoon or two of fish sauce (nam pla), one finely minced or crushed clove of garlic, and a bit of sugar. Just before serving, add some peanuts. Mix everything and garnish with cilantro. It should be refreshing, clean-tasting, and fiery.
Eat by itself as a snack or serve alongside other Thai dishes.

Hey, Tony! I've started a New Sincerity Reading List over at my blog, and I'd like to pick your brain. I'm applying to write a creative thesis this year, and would like to complile a reading list for the project that's based on a list of NS "must-reads." Can you help? Also, anyone who's reading these comments. I'm at http://ginger.typepad.com.
